Old Bay Tofu Cakes

From Tal Ronnen's recipe book:

On a bed of pan-roasted summer vegetables (peas, corn, cherry tomatoes, shallot), topped with beet and apple relish and horseradish cashew cream sauce.

Yup, I eat well. :)
